Today’s Catch of the Day: Seared Aku (Bonito) w/Ravigote Sauce

Sorry, no photo.  But Chef Matsumoto said today’s aku is one of the best aku he has ever seen…  Ravigote sauce is a classic, lightly acid sauce with tomato, minced pickles, and shallots.
